This is my last minute entry for the Easyjet tapas competition, which closes today... British scallops were half price at Sainsbury's so I managed to get eight huge ones for less than £4! I served them with white beans and sweet smoked paprika - two of my favourite Spanish flavours. Ah, I just love Spain!
Scallops in ham with white bean purée (serves 2 - 4)
4 tbsp olive oil
410g tin cannellini beans, drained
1 garlic clove, chopped
150ml boiling water
squeeze lemon juice
sweet smoked paprika
8 large scallops
4 strips serrano ham - halved lengthways
4 tbsp olive oil

- Make the puree by combining the beans, garlic, lemon juice, boiling water and 3tbsp olive oil in a saucepan and simmer for 5 minutes
- Season with salt and pepper, then mix with a hand blender until smooth. Keep warm.
- Wrap the scallops in the ham and secure with a cocktail stick
- Pre-heat a heavy skillet with a tablespoon of olive oil
- Pan fry the scallops for a couple of minutes each side
- Spoon the puree into a dish and sprinkle with a little sweet smoked paprika
- Remove the cocktail sticks from the scallops and perch on top of the puree
